Lentil and Veggie Cheddar Bake

  • 1 c. red lentils
  • 2 c. water
  • 3/4 c. cheddar cheese
  • 1/2 red bell pepper, finely chopped
  • 1/2 green bell pepper, finely chopped
  • 1 small onion, finely chopped
  • 2 cloves of garlic, crushed
  • Black pepper and salt to season
  • 4 eggs


1. Preheat oven to 350 F.
2. Bring red lentils and water to a boil in a saucepan. Reduce heat to simmer. Cover and cook until water is almost absorbed, turn off heat, add lid and leave for 10 minutes to soak up any remaining liquid.
3. In the meantime, spray a frying pan with spray oil and cook the onion, peppers and garlic for approximately four minutes.
3. Once lentils are ready, add them to a bowl.
4. Add the onion, red pepper, green pepper and garlic, then season with salt and pepper.
5. Add the cheddar and eggs and mix thoroughly.
6. Spray an 8-inch round pan with cooking spray, add the mixture and bake in the oven until it is golden and set, about 30 to 40 minutes.

Eierkuchen mit Linsen, Gemuese und Cheddar Kaese

200 g rote Linsen
500 ml Wasser
4 Eier
75 g Kaese (Cheddar)
½ rote Paprika
½ gruene Paprika
1 kleine Zwiebel
2 Knoblauchzehen

1. Backofen auf 180 Grad vorheizen.
2. Linsen in einem Topf zum kochen bringen,
3. Hitze zurueckschalten und Linsen koecheln lassen.
4. Waehrend die Linsen abkuehlen, Zwiebel und Knoblauch klein hacken.
5. In einer Pfanne Paprika, Zwiebeln und Knoblauch mit etwas Oel anbraten und mit Salz und Pfeffer wuerzen.
6. Linsen, Kaese, Eier und Gemuese vermischen und in einer eingefetteten runden Backform bei 180 Grad 30 bis 40 Minuten goldbraun backen.
